Quinoa Salad

Preparation time: 10 minutes

1 Cup Cooked Quinoa
½ Avocado
1 Hand Full Spinach
1/3 Cup Walnuts
1/3 Cup Cranberries
½ Lemon

  • Break the walnuts into smaller pieces and roast them for a few minutes in a pan
  • Cut the avocado & spinach
  • Mix the cooked quinoa (I recommend cooking it a day before or in the morning, so that it has enough time to cool down) with the rest of the ingredients, squeeze the lemon and add the fresh juice to your salad

The feel- good element:
This is a protein, mineral and vitamin rich salad. Quinoa is a grain, which contains a high amount of protein as well as minerals, which are important to a healthily functioning body. The avocado and walnuts are rich in Omega-3, a healthy fat, which is important for brain functioning, healthy skin and hair, as well as our mood. Spinach provides your body with a great amount of iron, keeping your energy levels steady. It is important to eat vitamin c together with iron, in order for the iron to be absorbed better for by our body. The cranberries provide the needed vitamin c. The combination of all these ingredients makes this salad a tasty super food salad.
